Planning for the 1st

In less then 2 months my precious baby girl will be turning 1. I'm probably going to ball my eyes out that day. I mean it feels like just last week I was sitting in the hospital with contractions. I can't believe how fast this past year has gone by. I'm trying to plan this party and it is so extremely hard for me. 1. I'm not that crafty; 2. I've never planned one before and; 3 the only party I've ever planned included a million jello shots and a beer pong table. 
I've decided to change her theme after almost a year of being glued to the idea of a mermaid theme. It's going to be a princess theme now. When we went shopping with Aubree's aunt Erin today at Target, we saw these invitations and thank you cards with the cutest little unicorn on them. I have no clue where to start. I don't know how many people will actually show up because these days no one RSVPs. I gotta make goodie bags. Which are actually gonna be the easiest part for me because that is my favorite part of any party lol. I even made goodie bags for my sister's bachelorette party. 
This will probably be the hardest thing I'll have to do. After this parties will be a breeze because they get older and they can do more.
I already know one year we will be doing her birthday party at Lazy 5 Ranch. haha.

Lazy Day Cookie Cake Recipe

Ingredients:
1 box yellow or white cake mix, I used yellow because it tastes better.
2 eggs beaten
5tbsp melted butter
2 cups mini chocolate chips

Mix all the ingredients and pour them into a greased 9x13 pan.
Bake at 350 degrees for 20 minutes.

No-Bake Strawberry Icebox Cake

This so easy and tastes so yummy. You can drizzle chocolate on the top but I left it off to give it a lighter summery feel. :)

Ingredients:
3lbs fresh strawberries, sliced
2-8oz tubs of whipped topping
1 box of graham crackers
1/4 cup chocolate chips


Spread a small amount of the whipped topping onto the bottom of a 9x13 pan. Put a layer of graham crackers on top of the whipped topping. Add another layer of whipped topping and put a layer of strawberries. Repeat this 3 more times until there are 4 layers of graham crackers. The layer last on top will be strawberries.

if you want to use the chocolate chips put them in a plastic bag and melt them in the microwave at 10 second intervals. Cut the corner of the bag and drizzle over top the cake.

Refrigerate covered for at least 4 hours or until the crackers have softened completely.

Red, White, & Blue Cake Recipe

You don't have to make this cake red, white, and blue. I made it those colors for Independence Day :)

Ingredients: (need 2 separate mixes in 2 bowls)
1 cup sugar x 2
1/2 cup butter x 2
2 eggs x 2
2 tsp vanilla x 2
1 1/2 cups all-purpose flour x 2
1 3/4 tsp baking powder x 2
1/2 cup milk x 2


Preheat oven to 350 degrees and grease 2- 9" round cake pans

In 2 medium mixing bowls, cream together the butter and sugar. Beat in the eggs, one at a time, then stir in the vanilla. 
In separate bowls combine the baking powder and flour, then add to the cream mixture, and mix well.
Add the milk and stir until mixture is smooth. Add food coloring to the bowls for whatever colors you would like the cake to be.
Pour into the pans and bake for 30-40 minutes.

Ice the cake with vanilla frosting and add sprinkles for a little more festive color.
