Oven-baked Doritos Chicken

My dad has made this recipe for a while now and it is one of my favorite recipes that he makes. I've made it for Josh and his friends a couple of times and they really like it too. It pairs perfectly with stuff like mexican rice and beans or biscuits and macaroni and cheese. It is an all around yummy dish.

1 2lb bag of chicken tenders
2 eggs
1 bag of cool ranch Doritos
1 bag of nacho cheese Doritos

Preheat the oven to 350F.
Crush the Doritos and put them into bowls. Put the eggs into a shallow dish for covering the chicken tenders. Take the tenders and dunk them into the eggs then cover them in Doritos. Put them onto a baking sheet.Cook them for 35-45 minutes or until thoroughly cooked. Serve and enjoy. :)

Baked Spaghetti

We have my boyfriend's friends over quite often because they all play video games together. I always cook and it is normally spaghetti or some kind of pasta because its cheap and fast. A couple of days ago they were all over and I had already planned spaghetti before I knew that they were going to be coming over. So I wanted to do something to the spaghetti to spice it up a bit. So I went to the grocery store and picked up some stuff to throw into the spaghetti. I baked it after the noodles cooked and it tasted amazing. I really never will make boring old spaghetti ever again. 

3 peppers( 1 of each red, yellow and green), chopped into small pieces
16oz. tub of ricotta cheese
cheese grated for the top
1/2 an onion minced up
1/2 a pack of mushrooms cut into small pieces
1 jar of spaghetti sauce(whichever one you prefer)
16oz of ground beef, cooked
1 box of spaghetti

Preheat your oven to 350F.

Cook the spaghetti to the instructions on the box. Take all the other ingredients in a big bowl and mix them thoroughly. Drain the pasta and add it to the rest of the ingredients. Put it into a 13x9 oven safe dish. Sprinkle the grated cheese cheese onto the top of the spaghetti. Bake it for about 30-35 minutes or until the cheese that is on top is slightly browned. Let cool for 5 minutes and serve.

Josh's friends really liked this recipe even though it was just spaghetti but it tastes so much better than regular old spaghetti. Another score for this girlfriend! :)

Delicious Black Bean Brownies

So I was really bored today after having cleaned the whole house and done some laundry. Aubree and I have been outside almost everyday so I figured it would be nice to take a day of break and just spend the day in the lovely air conditioned house. So I went on Pinterest and decided to look for some new recipes. I came across this recipe for black bean brownies. I've seen these recipes on there all the time but I've never thought about trying it. I actually had some black beans though for once. So I thought hey what the heck. If I don't like them I know Aubree will eat them. She eats just about pretty much anything. But I really loved them! They are so yummy and they are so much healthier than regular brownies. 

Here's the recipe :)

1 can of rinsed and drained black beans
2-3 tbsp of peanut butter depending on how much you want in it
2 eggs
4 tbsp coconut oil
4 tbsp cocoa powder
1 tsp vanilla
3/4 cup sugar
1/2 tsp salt

Preheat the oven to 350.

Put the black beans in a blender or food processor and blend until they are smooth. Then add the rest of the ingredients and blend until thoroughly mixed. Put it in a 9 inch cake pan. Bake for about 30 minutes or until the toothpick comes out clean. 



Josh even liked them and he isn't the type to try new things. I don't know if I will ever make brownies from a box again now that I know this recipe.

Hand Soap From A Bar!

Ok.  Now that I'm done with school for the semester I'll be able to put more blog posts up. I've been so busy with all my school work and trying to keep a household up and running with a 2 year old. It hasn't been easy. I commend teen moms they have it harder I do. Anyways, I got this thing off Pinterest of making hand soap from a bar of soap. I have a shopping addiction at Hobby Lobby. If I go in there I rarely come out with less than $50 worth of stuff. That store has the best stuff and really helps me with my new found creativeness. The last time I was in there I found a bag of glycerin squares. I was so excited, the project I was wanting to do called for glycerin but I haven't really been looking for it. And it was only $5! What a deal! 

All you need to make the hand soap is a gallon of water, a bar of soap( which ever one you choose), and some glycerin. I used my cheese grater to shred the soap and glycerin. I now need to buy a new cheese grater as mine was a cheap one from the dollar store and I broke it while making this! OOPS! You turn the stove on about medium heat and pour all the water into the pot. After a minute or two add the soap and glycerin shavings. Stir it until the soap and glycerin melt in the water. Let it cool for a few minutes and pour it into a gallon container. VOILA! 

A gallon can fill my hand soap dispenser in the bathroom at least 8 times! It is such a good money saver and I am so glad that I found it. I will never use store bought hand soap ever again.
